The artistry of creating Mandi




It’s not been long that Mobina opened its doors in the Sodepur area of Kolkata, West Bengal. Since then, the Indo-Arabic restaurant that opened in 2023 has been able to make a niche for itself in a very short amount of time. Courtesy of its exquisite dishes that has been able to bring in gastronomy enthusiasts from far and wide. All the dishes that this restaurant serves has found love in the hearts of the people who flock in everyday to try out its varied flavors. Be it the kebab, the dejaj, the murg musallam or the aromatic biriyani nothing falls short of standard. However, there is this one special dish that stands out in this restaurant- Mandi.  


Mandi, a traditional Arabic dish, is a fragrant and flavorful rice dish that originates from Yemen but is popular across the Arabian Peninsula and the wider Middle East. It's a dish that combines beautifully cooked meat with aromatic rice, resulting in a dish that is hearty, comforting, and perfect for gatherings. While preparing mandi might seem like a daunting task due to its complexity, with the right ingredients, techniques, and patience, you can recreate this delicious dish at home. Here's a comprehensive guide on how to prepare mandi:


Ingredients:


For the Meat:

  1. Chicken or Lamb: Traditionally, mandi is made with either chicken or lamb. Choose good quality meat with bones, as they add depth of flavor to the dish.

  2. Mandi Spice Mix: This usually consists of a blend of spices like black pepper, cumin, coriander, turmeric, cinnamon, cardamom, cloves, and nutmeg. You can find ready-made mandi spice mixes or make your own by grinding whole spices.

  3. Garlic and Ginger Paste: Freshly crushed garlic and ginger are essential for flavoring the meat.

  4. Yogurt: This helps in tenderizing the meat and adds a tangy flavor.

  5. Onion: Sliced onions add sweetness and depth to the dish.

  6. Tomato: Adds acidity and moisture to the meat.

  7. Oil or Ghee: Used for frying the meat and onions.


For the Rice:

  1. Basmati Rice: Long-grain rice works best for mandi. Rinse the rice thoroughly to remove excess starch.

  2. Chicken or Lamb Stock: For cooking the rice, you'll need flavorful stock.

  3. Mandi Spice Mix: Similar to the one used for the meat.

  4. Saffron: Infuse saffron strands in warm water and use this to color and flavor the rice.

  5. Ghee: Adds richness to the rice.

  6. Onion and Raisins: Sautéed onions and raisins make a delicious topping for the rice.


Preparation:

1. Marinating the Meat:

  • In a bowl, mix the meat with garlic and ginger paste, mandi spice mix, yogurt, and salt.

  • Allow the meat to marinate for at least 1-2 hours, or preferably overnight in the refrigerator. This helps the flavors penetrate the meat and makes it tender.

2. Cooking the Meat:

  • Heat oil or ghee in a large pot or pressure cooker.

  • Add sliced onions and cook until golden brown.

  • Add the marinated meat and sear it on all sides until browned.

  • Add chopped tomatoes and cook until they soften.

  • Pour enough water to cover the meat, bring to a boil, then reduce the heat and let it simmer until the meat is tender and cooked through. If using a pressure cooker, follow the manufacturer's instructions for cooking time.

3. Preparing the Rice:

  • Rinse the rice under cold water until the water runs clear, then soak it for 30 minutes.

  • In a separate pot, heat ghee and add the mandi spice mix. Toast the spices for a minute to release their aroma.

  • Add the soaked rice and sauté for a couple of minutes until the rice is well coated with the spices.

  • Pour in the chicken or lamb stock, along with saffron-infused water. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and fluffy.

4. Assembling the Mandi:

  • Once the meat and rice are ready, you can assemble the mandi.

  • Transfer the cooked rice to a serving platter, shaping it into a mound.

  • Place the cooked meat on top of the rice.

  • Garnish with fried onions and raisins for added flavor and texture.


Serving:


Mandi is traditionally served with a side of yogurt, salad, and pickles. You can also serve it with tomato sauce or green chili sauce for extra heat. When serving, make sure to mix the rice and meat well to distribute the flavors evenly.

  1. Quality Ingredients: Use the best quality meat, rice, and spices you can find for the most flavorful mandi.

  2. Patience: Cooking mandi requires patience, especially when simmering the meat and cooking the rice. Low and slow cooking ensures tender meat and perfectly cooked rice.
